Dining & Drinks
Our Chef – Estanislao Carenzo
Estanislao studied biology in Buenos Aires before learning the art of cooking in New York, Brazil, France, Spain, Korea, and Japan. His approach to food is almost as special as he is. In addition to his four restaurants in Madrid: Sudestada, Chifa, Picsa and Perro Bar, at Casa Bonay he has developed our Southeast Asian restaurant, Elephant, Crocodile, Monkey as well as our Libertine tapas bar and our rooftop Chiringuito.
Our Barista – Marcos Bartolomé
Marcos from Satan’s Coffee Corner is the meticulous type, and this is all very apparent in how he makes his coffee. Praised as one of the most renowned baristas in town, his original spot in the Gothic quarter of the city, opened in June 2014, has a cult following of coffee fanatics.
Hotel / Story & Neighborhood
We spent years looking for the perfect home and the right people for our project and ended up in the same neighborhood we grew up in. Right here, next to our local market, our park, the beach, our stores, and our neighbors.
After writing down a list of all the things we stand for—delightful food, making love, sunlight, Mediterranean wine, books, cocktails, good coffee, music, yoga, and dancing—we put them all together and simply applied a valuable yet highly underestimated tool in the making: intuition.
Casa Bonay is the fruition of an idea carried out by a diverse team of collaborators.
Among these creators you can find lighting, furniture, interior, fabric, and graphic designers, homemade soap producers, local weavers, international chefs, book editors, and coffee and wine experts.
The one thing we had in common was that we admired each other.
